Gameday Grub: Black Bean Feta Salsa

I'd never had this dip/salsa before moving to Mobile. Once I tried it, I thought it would be a hit with my family and I was right! It's easy to throw together and travels well.



Black Bean Feta Salsa

1 can black beans, drained and rinsed
1 can shoepeg corn, drained and rinsed
1 carton feta cheese (5 oz.)
3 green onions, chopped
1/4 cup apple cider vinegar
1/4 cup olive oil
1 tb sugar

Combine black beans, corn, feta cheese and green onions. In a separate bowl, whisk together vinegar, olive oil and sugar. Pour dressing over black bean mixture and stir. Allow to chill for two hours. Serve with the chip/cracker of your choice. We like wheat thins and tortilla chips. Best served same day.
